Not Yo' Mama's Banana Pudding

Ingredients: 2 bags Pepperidge Farm Chessmen cookies; 6-8 bananas (sliced); 2 cups milk; 1-5 oz. box instant French vanilla pudding; 1-8 oz. package cream cheese (softened); 1-14 oz. can sweetened condensed milk; 1-12 oz. container frozen whipped topping (thawed), or equal amount of sweetened whipped cream.Directions: Line bottom of a 13" x 9" x 2" dish with 1 bag of cookies and layer bananas on top. In a bowl, combine the milk and pudding mix, blending well with a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk and mix until smooth. Fold the whipped topping into the cream cheese mixture, the add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas, and cover with remaining cookies. Refrigerate until ready to serve.

Dr. Bird's Banana-Pineapple Cake

Mix: 3 eggs; 1 1/4 cups cooking oil; 2 cups sugar, 1 teaspoon salt; 1 1/2 teaspoons vanilla; 1 teaspoon cinnamon. Sift and add to above; blend, but do not beat: 3 cups flour; 1 teaspoon baking soda. Add: 2 cups mashed banana; 8-oz. can crushed pineapple, undrained; 1 cup crushed nuts. Bake in greased and floured 13" x 9" x 2" inch pan or bundt pan at 350° for 60-70 minutes. Cake will crack slightly on top. Cool in pan on rack. Cake will stay moist.

Yogurt Pie

Fold 2-8 oz. yogurts (any flavor) into 9 oz. Cool Whip. Spoon into graham cracker crust. Freeze until firm (about 4 hours). Remove from freezer 30 minutes before serving. Garnish with fruit, if desired, prior to serving.

Harry's Cookies

Ingredients: 1 cup shortening; 1 cup white sugar; 1 cup brown sugar; 2 eggs; 2 cups flour; 1/2 teaspoon baking powder; 1 teaspoon baking soda; 1 teaspoon vanilla extract; 1/2 teaspoon salt; 2 cups quick oats (oatmeal); 2 cups cornflakes (crushed); 1 cup coconut. May add a package chocolate chips if desired. Directions: Cream butter/margarine and sugars. Add vanilla and eggs. Sift dry ingredients and add to creamed mixture. Mix in oatmeal, cornflakes and coconut. Form into cookies and bake at 350° for 10-12 minutes.


Buster Bar Dessert

Ingredients: 1-10 or 12 oz package of Oreo cookies (crushed - centers and all); 1/3 cup margarine. Mix and press into 9" x 13" pan; freeze. When frozen, spread 1/2 gallon vanilla ice cream and 1 cup salted Spanish peanuts over "crust"; freeze. In a pan, heat to boiling 1/2 cup margarine, 2 cups powdered sugar, 1 1/2 cups evaporated milk, 2/3 cup chocolate chips. Boil (& stir) mixture 8 minutes, allow to cool, then add 1 teaspoon vanilla, and pour over mixture and freeze.


Texas Sheet Cake (Candy Cake)

Bring to a boil: 4 tablespoons cocoa powder; 1/2 cup Crisco shortening; 1 stick butter (1/2 cup); 1 cup water. In a mixing bowl, combine: 2 cups flour; 2 cups sugar; 1 teaspoon cinnamon; 1 teaspoon baking soda; 1/2 teaspoon salt. Stir flour mixture and cocoa mixture together. Add 1 cup buttermilk and 2 eggs (beaten). Pour batter into a greased and floured 9" x 13" x 2" baking dish. Bake at 400° until a toothpick comes out clean, about 30-40 minutes. Icing: Bring to a boil: 4 tablespoons cocoa powder; 6 tablespoons milk; 1 stick butter (1/2 cup). Stir in 1-16 oz. box of confectioner's sugar and 1 teaspoon vanilla. Spread on warm cake. Enjoy!

Carrot Cake

Sift: 2 cups sugar; 2 cups flour; 2 teaspoons baking soda; 2 teaspoons cinnamon. Add 1 1/2 cups oil; add 4 eggs (one at a time). Beat well. Add 3 small jars strained carrot baby food. Pour into 8 1/2" x 13" pan and bake at 350° for 45 minutes. Icing: 3 cups powdered sugar; 1/2 cup butter; 3 oz. cream cheese; 1/2 teaspoon vanilla. Add a small amount of milk and mix. Spread on cooled cake.

Applesauce Brownies

Cream together 1 stick margarine and 1/2 cup sugar. Add 2 beaten eggs, 2 tablespoons cocoa, 2 cups flour, 1 1/2 teaspoons baking soda, 1/4 teaspoon salt, and 1 can (2 cups) applesauce. Pour mixture into greased jelly roll pan; sprinkle with white sugar and chocolate chips; bake 15 minutes at 350°.

Cherry Squares

Combine 1 cup margarine and a 1/2 cup sugar. Cream together and then add: 4 beaten eggs, 2 cups flour, 1 teaspoon vanilla and 1 teaspoon lemon extract. Spread in greased jelly roll pan. Make into squares and spoon cherry pie filling on each square. Bake at 350 degrees for 45 minutes. Cool and cut into squares. Sprinkle with powdered sugar.

Hot Fudge Cake

Ingredients: 1 German Chocolate cake mix, 1 can Eagle Brand milk, 12 oz. jar of hot fudge topping, 8 oz. Cool Whip, crushed Health bars or candy bar of your choice. Bake cake according to box directions. While still warm, poke holes on top (use handle of a wooden spoon). Pour 1 can Eagle Brand milk and 1 (12 oz.) jar hot fudge topping (heated in microwave oven) in holes. When completely cool, spread top with 8  oz. Cool Whip and sprinkle with crushed Heath bars.
