Mexican Green Beans

Ingredients: 1/3-1/2 lb. bacon; 1 cup or less onion; 1/4 cup flour; 1 tablespoon chili powder; 1 teaspoon salt; 3 tablespoons sugar; 3-15 oz. cans green beans; 2-15 oz. cans stewed tomatoes. Directions: Drain beans and put in 8" x 12" flat casserole pan. Fry bacon and onion until brown; stir in flour, chili powder, salt, and sugar. Add tomatoes. Pour tomato mixture over beans. Bake 30-40 minutes at 325°.

Hamburger Pie

Ingredients: 1 lb. hamburger; 1/2 cup chopped onion; 1-15 oz. can green beans; 1 teaspoon salt; 1 tablespoon sugar; 1/4 teaspoon black pepper; 1/8 teaspoon oregano; 1 can tomato soup. Directions: Cook hamburger and onion; stir in green beans, soup, and seasonings. Pour into casserole dish; top with prepared instant mashed potatoes. Bake 20-25 minutes at 375°.

Wild Rice Casserole

Ingredients: 1-6 oz. box Uncle Ben's Long Grain & Wild Rice with Herbs & Seasonings; 1 stick margarine/butter; 1-4 oz. can mushroom pieces with juice; 1 small onion (chopped); 1/4 small green pepper (chopped); 1/4 cup diced ham (optional); 2 ribs celery (sliced); 1/4 cup chopped almonds. Directions: Simmer mixture for dressing 1 hour or longer until liquid evaporates. Cook rice according to package directions. Mix rice with dressing mixture and place in baking dish - sprinkle with chopped almonds. Cover and heat 1/2 hour in 350° oven. Can be prepared in advance.

Favorite Hashed Brown Cheese Casserole

Ingredients: 2-12 oz. packages frozen hashed brown potatoes; 2 cups sour cream; 1 can cream of chicken/celery/mushroom soup depending on what you have; 1 stick margarine or butter (melted); 1 teaspoon salt; 1 tablespoon minced onion; 2 cups shredded cheddar cheese; 2 cups cornflakes (crushed); 1/4 cup butter (melted). Directions: Thaw potatoes and drain well. Combine sour cream, soup and 1 stick butter. Mix well and add salt, onion, and cheese. Blend in potatoes and stir well. Pour mixture into shallow 2 qt. casserole. Mix cornflakes and 1/4 cup melted butter and sprinkle on top of potatoes. Bake, uncovered, at 350° for about 50 minutes or until brown and bubbly.

Do-Ahead Mashed Potato Casserole

Ingredients: 10 large potatoes, cooked and mashed; 1 (8 oz) pkg. cream cheese, 1 cup sour cream, ½ teaspoon garlic salt or onion salt.

Combine all ingredients and beat until fluffy. Place in greased casserole dish, top with butter, paprika, & chives. Refrigerate until ready to use. Bake at 350 degrees for 30-40 minutes or place in Crockpot on low for 5-6 hours. Serves 8-10.

Chef's Notes: I usually add a little butter and milk to mash the potatoes. This recipe is handy for holidays because you can make it up to two days in advance.
